A Receipt for to makes Mead
To Every gallon of Water put 3 pounds or
3 pounds and ahalf of Honey or so much as
will make your water bear an Egg the breadth
of a Shilling above it. Boil it as long As any
Scum Arises scumming it all the times put into
it. A little Cinamon ginger Mace Saffron and
Merigold flowers in a bagg when it is cold
Put to it Supposing there be 6 Gallons A quart
of the best ale yeast or more work it a week
or longer Beating it In 3 or 4 times a day
til you find the Sweetnefs to go off then
Tun it up in a Sweet Vefsel Bunging it Close
down but leave the Vent hole Open so long as
you can hear it hifs When it has done hifsing
Stop it up Close and keep it a year Before you
Tap it if it shou'd Prove thick upon the
first Tapping draw a quart and Stop it up
again and two or three times so doing it will
be fine then Bottle it for your Use when it
