To make currant Jelly
Pick the currants and put them in
a brass pan, no water set them on
the fire, stir until they give out
their juice and become as best as you
can bear your [?] in, take them
off and pass what juice yon can
through a hair [sieve], the remain
der through a clean cloth, wash
the cloth and pass the whole of the
juice through it a second time,
measure it and to every limit of juice
put a it [?] sugar. The
sugar to be finely broke and press into
the pan and the juice poured on it
stir [?] the sugar is all disolved,
then let it come to the foil and skim
it as fast as you can far after it
comes to the foil it must not be
allowed to remain on the fire more
than two minutes - Then take
