Theory
When sugar is cooked with
acid it turns the sugar to
glucose. As crystal form on
kettle they must be dissolved
in such a way as to keep
them out of the syrup.
Cook uncovered. Never stir.

Pour your syrup until the stream stops and never
scrape it out or let it drip
out.
Let syrup get cold before
you begin to work it and
do not waste
