Take a peck of spinage washed very cleane
& dried from ye watE & beat it very small then
break 10 eggs into a deep pan & half ye whites
being taken away & beat ym very well then squeese
in ye juice of ye spinage this being beatentogether & strained
into a pan put to it one nutmegg grated a penny loafe
grated & half a pint of Creame & a little salt it being
seasoned wth suger to yoE pallet
