Cleare Cakes of Orange
Take the soft Bermooda Orranges, Cut them in pieces & boyle them in a
Large kettle of water till they be very tender, & then straine out all the water
from them, then shread them very small with a knife on a trench or pick out all the
seeds, & strings & put all together, then make Jelley of John apples & Redish
pipppins make it very strong, then take 1/2 lb of the soft double refined sugar
& half a pint of pippin Jelley, let the sugar be finely coat & boyl them wel
together, then put the Juce of your orring In, & one spoonefull of the Juce of
Leamon, then take your waight of all this In double Refined sugar, and
boyle it by it selfe to a fandy height, then put altogether & keepe them
stirring continually on the fire till the sugar be Molted, but not boyle
them, Let them stand of the fire a while, then set them on againe a little still stirring
them: be careful that they do not boyle this do 3 times then put them into your
Glasses, & the next morning put them Into your stove; & dry them with An
even fire
