Cleare Cakes of Rasberries {101}
Take a quantitie of Rasberries & put them Into a silver dish for
pewter will spoyle them. on the fire break them with a spoon & make them
hott, then straine them & take 1 lb of double refined suger; & boyle it t
a Candy height then take it of the fire & put to it a pint the juce of
the Rasberries & stir it well together, & set it on the fire no Longer till
the suger is desolved but not to boyle then take it of the fire & stir it
well & put it into your glasses

Sirrup of Clove gilliflowers
Take clipt Gilliflowers with their weight & halfe of fine
suger beat very fine, stamp the flowers in a well glasd pott;
Lay a Lace of suger & Layer of flowers till all be Laid In the pott
& tie up the pott close with a pap & set It In a boyling pott of water
& lett it boyle a pace; & when the strength of the flowers [air] out; strain
It Into a silver Basson & set it over the fire; to thicken but not boyl
If you will have it Look well Let it be the best suger the flowers
strain'd out put up with wine vineger is a pretty sallet; this is the
best way to make any other sirrup, as Cowslip Mary gold or violet, or
Cylorns Leamons & orranges the suger & sirrup put together and
ordered as the other only there must be a double weight of suger
to the Juce/

Sirrup of Corrall
Take Corrall finely poudered; pour upon it the Juce
of Barberries pressed before they be full ripe being turnd A
Little red well philler'd they will firment at first Let them
stand shakeing or stirring till the Juce be, culloured Red then
pour it of and straine it Cleare, put on more till the Corrall
will yeild no more Cullor; then putt suger to your Juce which is Cullor'd &
cleare & let it desolve in it/
