To Make Sirrup of Gilliflowers Leamon
Take Gilliflower & when you have Chipt from white
& green stalkes cut very small a knife, & squeeze in
Juce of Leamons till it is of a Reasonable Moystnesse, Let
Set it Stand 2 dayes covered, & Straine Juce, & to every
pound of Juce take 1 lb & halfe of double refined sugar
Dip Suger in water & boyle it to a Candy height; put
in Juce & Scald it for a good while& scum it, but before
it do not boyle; Straine it through a gelly Bag, & it
is cold bottle it.
