To Make Sirrup of Gilliflowers with Leamon
Take Gilliflower & when you have Chipt them from the white
& green stalkes cut them very small with a knife, & squeeze in the
Juce of Leamons till it is of a Reasonable Moystnesse, Let
Set it Stand 2 dayes covered, & then Straine the Juce, & to every
pound of Juce take 1 lb & halfe of double refined sugar
Dip the Suger in water & boyle it to a Candy height; then put
in the Juce & Scald it for a good while& scum it, but before
it do not boyle; then Straine it through a gelly Bag, & when it
is cold then bottle it.
