To make Sirrup of Elderberries {105}
take a pint of Renish wine & put into it 2 handfull of Elder
blossomes Let them Stand together in a bottle close Stopt till the Elderberries
be Ripe, and then take the Berries & bruise them a Little & then Straine the Juice
from them & let them 2 or 3 hours to Settle; then take to every pint
of Juice 1 lb &1/2 of Sugar & Straine the wine from the flowers put to it
& when the Sirrup is enough take it from the fire & set it by till the next
morning, then Bottle it /

Sirrup of Elder
Take an Earthen pott full of Elder berries set them Into an
oven to bake; next morning Straine out the Juice gently not Squeezing it
to every pint of the Juice take 1 lb & 1/2 of the best powder Sugar finely
dryed & beat Stir it well together & set it over warm Embers 12 hours
not Letting it Boyle but only scald for the first 6 hours often Stirr
ing it then Set it by till morning & carefully take off the Scum
thet will rise & then bottle it /

To make a Sirupp of Saffron
Take 1 ounce of good Saffron & Steep it in a quart of white
Anniseed water; stir it 2 or 4 time a day for a fort night then
take a pint of Cardus water & 1 pint of Cowslip water, 4 lb of double
Refined Suger boyle it In the the Cowslip & Cardus water to a resonable
thicknesse till it be cleare, then take your Anniseed water & Straine
the Saffron grom it & then putt the water Into the Sirrup & boyle
it gently & Scum it well & put it up into Bottells for your
use/
