To make Sirrup of Elderberries {105}
take a pint of Renish wine & put into it 2 handfull of Elder
blossomes Let m Stand together in a bottle close Stopt till e Elderberries
be Ripe, and n take the Berries & bruise m a Little & n Straine e Juice
from m & let m 2 or 3 hours to Settle; n take to every pint
of Juice 1 &1/2 of Sugar & Straine e wine from e flowers put to it
& w n e Sirrup is enough take it from e fire & set it by till e next
morning, n Bottle it /
Sirrup of Elder
Take an Earthen pott full of Elder berries set m Into an
oven to bake; next morning Straine out e Juice gently not Squeezing it
to every pint of e Juice take 1 & 1/2 of e best powder Sugar finely
dryed & beat Stir it well together & set it over warm Embers 12 hours
not Letting it Boyle but only scald for e first 6 hours often Stirr
ing it n Set it by till morning & carefully take off e Scum
t will rise & n bottle it /
To make a Sirupp of Saffron
Take 1 ounce of good Saffron & Steep it in a quart of white
Anniseed water; stir it 2 or 4 time a day for a fort night n
take a pint of Cardus water & 1 pint of Cowslip water, 4 of double
Refined Suger boyle it In e the Cowslip & Cardus water to a resonable
thicknesse till it be cleare, n take yo Anniseed water & Straine
e Saffron grom it & n putt e water Into e Sirrup & boyle
it gently & Scum it well & put it up into Bottells for yo
use/
