112 To make Orrange Cakes
Take the Juce of 6 Orranges then Boyle the Pills untill they be
tender & mince them as small as Mince meat, and put it [to] the Juce &
pulp & mix altogether and boyle up [your] suger to a Candy height
before you put the orranges to it then set it warm gently 2 or 3 times
over the fire before you put it Into glassess to Jelley then cut it
out Into Little cakes to Candy In a stove.
To make Damson Biscuit
Take what Damsons you please, put them in an Earthen Pot & tye them down close
& put that in a kettle of water & let them
infuse till tender, then rub them through a
hair sive then take that pulp & boil it a
little over a charcoal fire till it is a little
stiff then to a pound of the pulp put a pound
or a little more of sugar beat &^ sifted through
a [lawn] sive and beat it with a spoon for
two hours & put it in a paper pans & drie them
in a stove or before the fire.
To make Dutch Cakes
Take a pound of flower 3 oz.s of Butter
3 Eggs & some yeast & make them into a light
Paste with warm milk as for White Bread
about the size & thicknes of farthing Roles.
They require a great while beating
