To make a kind of Malt drink Cheshire way{41}{123}

Take a firkin of good Ale when it is 3 dayes old & make it after this
manner; take 3 pints of good honey & put It Into a pan, & put to it
2 or 3 quarts of wort or new Ale & stir the honney well In, & set it on the
fire to clarifie & as it boyleth take of the scum, as cleane as you
can till it Looke very Cleare; then put in halfe of peper an ounce
of Cloves & 20 Nutmegs beat them well & boyle them In your Clareifide
Liquor, If the Liquor be not Enough to boyle the Spices in put in a
quart of Ale, more to it, put 2 ounce of Anniseeds & as much Lycurish
when it is boyld Let it stand to coole, & then uncover your firkin of Ale
& pour it Into your Ale & work it well together, you must Let it
stand uncovered/

Take a cock flea him & then parboyle him In a then beat him
In a Morter bones & all, then Steep him all night In a pottle
of Sack; & then tun it Into 10 Gallons of Ale before the Ale
hath quite done working, with 4 pounds of Reasons of the Sunne Stond &
beat In a Morter with a quarter of a pound of dates Sliced & beat In A
Morter put all Into your Barrell & stop it up close for 5 dayes
and afterwards Bottle it then after 6 or 7 dayes drink it/

Another Cock Ale

Take 2 Large Capons parboyle them on a Soft fire for the
Space of an hour till all the blood be gone out, ad In the Leach
a pill of a Sweet Leamon or a good part of a Cytorn; then with a strong
Knife Mince the 2 Capons bones & all as small as ordinary
Minced Meat, & put them Into a Large Boulter bag, then take A
Kilderkin sweet & well seasoned, & before your Ale hath done
working put In your Boulter Bag, & let it Lye 3 dayes & 3 nights
Leaving the Bongue hole open to work out of, then Stop the Bung
hole 2 dayes then dray it out & Bottle it; you may drink it
well after 2 dayes Botling; it it will keep good 6 weekes &
is good against a Consumption/
