you please to have it; make Brine for it of Common Salt
& some salt paler & pump water as Stronge as will boare an Egge
put In Beefe & let it Lie 4 or 5 dayes according to your bignesse
of Beefe, & shift it once Into fresh Brine in time, take it
out & dry it and take of Skin, Season it Cloves Mace
Nutmeggs white pe & sweet herbs shread small & gash it
a knife it may Receive Seasoning, & let it be pretty high
Seasoned make it in around Collor bound tape & put
Into a pot some flarrol wine & a Little Suit at Top Cover
pott Brown past, & Bake it houshold Bread; if it
be a Large Collor it will take 6 hours Bakeing, it is very
tender take it out, & it is almost cold bind it a Little faster
Collor may be Close.
