To Collor Beefe
Take a flank of Beefe the thin end Cut of; of what Largenesse
you please to have it; then make Brine for it of Common Salt
& some salt paler & pump water as Stronge as will boare an Egge
then put In your Beefe & let it Lie 4 or 5 dayes according to the your bignesse
of your Beefe, & shift it once Into fresh Brine in the time, then take it
out & dry it and take of the Skin, then Season it with Cloves Mace
Nutmeggs white peper & sweet herbs shread small & gash it with
a knife yet it may Receive Seasoning, & let it be pretty high
Seasoned then make it in around Collor bound with tape & put
Into a pot with some flarrol wine & a Little Suit at the Top Cover
your pott with Brown past, & Bake it with houshold Bread; if it
be a Large Collor it will take 6 hours Bakeing, when it is very
tender take it out, & when it is almost cold bind it a Little faster
yet the Collor may be Close.
