Take a pint o Clarrot & a blade of Mace 2 or 3 Corns of pe p

Mushrumes being cleane [wipt] out of t e pickle sliceing t m
Into this Wine in a Saucepan & let them boyle till most of t e
Liquor be wasted after, then have Reddy t e yolks of 2 Eggs blend
with one Anchovie & t e juce of A Leamon & some Nutmeg &
a Little piece of Butter & 6 or 8 Spoonfull of Strong Gravie
& put those Into y r Saucepan & shake all those well to
gether over t e fire till t e sauce be thick but not curdle
rub y r dish w th Sallott t e are very good
To Fry Oysters
Take yo r Sargent Oysters and wash t m In their own Liquor
t n boyle t m up In grated Brean & flower & fry t m In sweet
Butter for t e Sauce; take t e Liquor of t e Oysters & some white
wine & A blade of Mace & A Little Leamon pill, & a faggott
of sweet herbs a little pep & boyle t m all together t n take
Some butter & draw it thick w th An Anchovie t n look put all
together w th t e Oysters & shake t m well up & serve t m up w th
Sippitts put a Little Juce of Leamon Into yo r Sauce before
It goes Into yo r pan
