Violet Water 215

Take quarts of the best wine vinegar you can get & 12 quarts of blew
violets & divide your violetts Into 8 parts & Steep every part In all the
Vinegar 3/4 of an hour at the most but first you must put your vinegar
Into a wide mouth'd glasse & after your violets have penetrated
3/4 of an your you must pour of the vinegar Into Such another
Glasse of the violets & sead the like quantities of violets you put in
before & So continue till all be In ordering them as the first till
all the 8 jarss be steeped; keepe the glass Close Stopt & let it Stand
C Settle, then pour it of Into anoter Glasse & keep It Chose Stopt
& Set It in some wind or where the Sun may com through the glasse.
but not In the open Sun for the first 2 or 3 monthes the vinegar will
not tast strong of the voilet but the more time the more Strong

Some hold the white violets to be as good for the use & the purple
as the blew but I find the blew to be far the better.
