into a Bowl, with the juice
of 2 lemons, and mix them
together. Then beat the white
of an Egg to a very high
froth, put it into your
Bowl, beat it half an hour
& then put in 3 Eggs with
2 rinds of lemon gated.
Mix it well up, & throw
sugar on yr papers drop
in the puffs in small drops
& bake them in a moderate
oven

Savoury Jelly
Make a stiff Jelly with Beef
Veal & Ham; season with
pepper and salt a blade or
two of mace & an onion When
Blood warm put it the
whites of 2 or 3 Eggs & run
it thro' a jilly bag When
clear, pour the jilly upon ye
meat.
