How to preserve Creme green Apricoks
Take Aprocoks w & pare them thin y slitt y in y seame & Putt y into faire wat the wat most be cold y take y out of y wat & way y & take there weight in fine sugar y take Apricoks & putt y into a scillet of cold wat & cover y close & sitt y ov y fire and so let y stand will they be scolding hot then take t of a little shile & set y on againe & so doe till they be very green & tend y take y out of the wat & lay y in a Sylver or Earthen dish strew some sugar on y y take waight of waight for waight in sugar take a quart of a pint of wat that y Apricocks was scaled in & make a sirrup of it y putt in yo apricoks & boyle y a little while y take y of the first & take out all sheare stones & put y in y sirrup againe & boyle y up 5 or 6 warm times y take up yo Apricoks and lay y in broad dish & boyle yo sirrup again and put it warme to y Apricoks & so lett y stand all night before yfireour putt y up you must ad to this Amb grease of mush if you please:
