How to make Lemon Cream
Take 4 Lemons paire [pare] them very thin, put
e pealls [peels] in to a pint of water. Let them stand
till e water taists [tastes] strong of e peal, then take
them out, and beat e whits [whites] of of 4 eggs put
them in to e water, and e Juice of e 4
Lemons, sweten [sweeten] it to your taist with fine
Sugar, straine it throue [through] a [Lawn] Sive [sieve], put in
a Littel oring-flower water, set it on a slow
fire stur [stir] it continewally [continually] till it is as thick
as Cream, then take it of [off] e fire and Stur it
till it is allmost cold, then put it in Glases.
