How to make Lemon Cream
Take 4 Lemons paire [pare] them very thin, put
the pealls [peels] in to a pint of water. Let them stand
till the water taists [tastes] strong of the peal, then take
them out, and beat the whits [whites] of of 4 eggs put
them in to the water, and the Juice of the 4
Lemons, sweten [sweeten] it to your taist with fine
Sugar, straine it throue [through] a [Lawn] Sive [sieve], put in
a Littel oring-flower water, set it on a slow
fire stur [stir] it continewally [continually] till it is as thick
as Cream, then take it of [off] the fire and Stur it
till it is allmost cold, then put it in Glases.
