How to make Lemon Cream
Take a pint of water, e thin rinde [rind] of 2
Lemons. Let it steip [steep] till e water taist [taste] strong
of e lemon, then take e whites of 6 eggs
beat them & put them to e water, and the
Juice of 5 Lemons, sweeten it with Doubel [double]
refined sugar, strain it throue [through] a hair sive [sieve]
put in a Littel [little] oring [orange] flower water, get it on
a Slow fire that it can not boyle [boil], stur [stir] it
allwais [always] one way till it be thick, w ch will be
Long a doeing, becaus if it be don Quick it
will not Louke Cleare, you may make oring
the same way puting in yolks in stead
of whites;
