To make eye bright wine

Take 9 Gallons of Water, put to it 13li Sugar Nuttmeggs
1oz 1/2, Ginger & Cloues 2 oz ffennill seeds, 1oz
bruise the spices & put them in a linnen bagg 7 hang
them in the water, to boyle, skim it Clean & add
the rinds of 6 lemmons, when it hath boyld halfe an
hour, pour it upon 4 dossen of eye bright picked from
the Stalks, when it is cold ^strain it worke it up with ale yeast
Straine it & put it into a uesell, & let it stand a
mounth, put a peece of loafe Suger into euery bottle
& Stopp it Close.

To make Elder Wine

Take 20li Maligoe Reasons pick the stalks from
them & rubb them clean & Shread them small, boyle
5 Gallons of water 1 hour 7 pour hott on the Reasons
& let the uessell stand warme neare the fire 10 days
with a double Cloth & a blankett atirring it now & then
passe it through a haire siue then squesse it through
a strainer, pick the Elder berrys from the Stallks
& put them into an earthen pan or pott & sett them
into a Kettle of water let boyle till the Iuyce come,
out, then Strain them out, & sqeez them hard, to
gett out the Pulp, & when it is cold, put to euery
gallon of the liquer straind from the reasons, a
pint of the Elderberry Iuyce, Tunn it up in a uessell,
let it be stopt Close when it hath don working, Let
it stand 3 mounths, then botle it of.

ffor the Iandice

Take the leaues of Hartechoaks, & Strip them from the Stawke
as you do Tobacco leaves, then shred them & put them
into 2 quarts od ale, & boyle or infuse it till it be but one
quart, take euery morning some, & if that be not suffic[...]=-
