Take 30 large cowcombers, slice them and fiue onyons

handfulls of salt on them, let them stand a day and
night in the liquour, then drain them uery well

take viniger put in cloues mace and whit peper boyle
them togeather and put them to y r cowcombers boyling
hott, couer them uery close and let them stand tow days
then pour out the liquor and boyle it ouer again then
put it on them as hott as before, and when cold tye them
down uery close

fair water as will cover them and quart of ale yeast
