Description

The plant and the edible stalks (petioles) of species and hybrids (culinary rhubarb) of the genus Rheum, which are cooked and used for food. The roots and stems contain anthraquinones, used as laxatives, antimicrobials, and anti-inflammatory agents. The leaves contain oxalic acid, a nephrotoxin.
