Muffins -
1. quart of milk - 3 Eggs - 1/2 Tea-Cup of yeast - as much
[?] flour as to make a Batter - Bake them as
Buckwheat Cakes - Butter them - and sift Cinnamon
and sugar over them - or grated Nutmeg -
Short Cakes -
2. Tea-Cups of Butter - 2 ditto of sugar - 3. Eggs -
a little pearl ash - as much flour as will
enable you to make them up. -
Dashington Cake -
1. # - and three quarters of flour - 1 # and a quarter
of sugar - 1 # [&?] 1/2 of Fruit - 3/4 # Butter - 1. pint of
milk - one Nutmeg - one Teaspoonful of pearl
- Ash dissolved in a glass of wine - beat the
Butter and sugar together - stir in a little flour
by degrees - as you add the warm milk -
Cinnamon and a few Cloves - chop the
Raisins two, or three times - and put them
and the Currants the last thing - flour the
Cake pan - and let the Bake-pan be well
heated - three or four Eggs is an improve-
=ment - but it is very good without them -
