(1 To make a little Cake

Take four pounds flour, one pound & a Quarter Sugar, one pound Butter, one pint milk, one pint Yeast, half an oz. of Spice and 6 Eggs

Sugar Cakes

Take one pound flour, one pound Sugar 10 Eggs rose water & Seeds

Portugal Cakes

Take flour, Butter, & Sugar, a pound of Each, a Quarter pound of Currants a little Canary & Spice

Plumb Cake

Take twelve pounds flour, five pounds Butter, five pounds Sugar Eight pounds Currants, two oz. Spice, on pint Canary one pint rose water, 40 Eggs, 1 pint yeast Glaze it with the whites of four Eggs, & Sugar, & rose water beat up together & Spread on when the cake is hot.
