Pot Roast of beef
Choose a compact piece of meat.
Wipe with a clean damp cloth.
Sear all the surfaces. Plung in
boiling water and boil rapidly 5 minutes.
Choose a kettle to fit the roast.
To avoid excess of water Add 1 tsp
of salt for each lb of meat. Draw it
to the back of the range and cook
slowly until done at least 30 minutes
to the lb and 30 minutes to the pot.
During the later part have the
kettle uncovered until all water
is evaporated. Brown meat in the
kettle. Use some of the drippings
