Fried Fish
8 individual portions of fish
1 cup of crumbs 1 egg 1 tblsp of water
2 tsp salt clean the fish and wipe
as dry as possible sprinkle with the
salt beat the egg with the water slightly
crumb, egg [wash] and crum and fry in deep
fat drain on crumpled absorbing
paper serve on a hot platter
Fish Turbans
Cut a fillet of fish and remove the
bone Roll into a circle and skewer
with toothpicks lay a think slice of
bacon on each turban place on a rack
in a the a baking pan and bake in a
moderate oven 20 minutes Remove
toothpicks + serve
Egg Sauce
½ cup of White Sauce ½ hard cooked
egg in the sauce in slices, Serve over fish
