Scalloped Turnips.

Boil turnips. Cut in cubes
Make a cream sauce by
rubbing to-gether a tables.
butter & one of flour -
Add 1/2 pt. milk and stir
to boiling - put a layer of
turnips then layer of sauce
and so on, having the last
layer sauce - sprinkle over
a few bread crumbs and
bake in a moderate oven
for 10 minutes.

Zemph Gurken or Mustard Pickles.

Peel [cut?] and scrape out
seeds of large yellow
cucumbers. Put salt
over them and leave
over night. Pour off water

I assume "Zemph" is a phonetic spelling of the German "Senf" - for mustard.
