Boiled Fish
Put in celery, parsnip, onion,
carrot, parsley to boil.
When vegetables are tender put
in fish (cleaned and salted)
skin off - Then take cup of
milk, tablespoon flour, mix
to gether [With] put in to boil
also lump butter. When fish
are done lift out fish put
on platter strain sauce
thicken with yolks of eggs.
Don't let sauce boil while
eggs are being put in -
pinch of salt.
