Deserts Puddings - Pies

Lemon Creme

2 cups water, the juice of two lemons and grated peel of one then add 1 cup sugar. 2 tablespoons cornstarch stir with a little cold water, when boiling pour in. Then add yolks of 6 eggs well beaten till it comes to a boil Then add the beaten whites (little a time) till done while still on stove all this is done. Then pour in dish let cool, serve with macarrons or cake.

Farena Pudding

Boil rhubarb with sugar & vanilla Strain through a siev when done then add a cup farena boil till thick serve with vanilla creme.

Vanilla creme

[?} pt milk, put in sugar enough to sweeten, vanilla to taste, add 1 spoonful corn starch mixed in cold water

Cream Charlotte Russe.

(For two people)

1/2 cup milk and 1 tables. geletine, allow these to soak about twenty minutes Then place this in a pan of hot water on stove until thoroughly dissolved. - 1/2 cup of whipping cream and the whites of two eggs, beaten separately until stiff. Sugar to taste When the geletine has cooled mix to-gether. Place on ice in a mould. Add flavor -

Yellow sauce (With the above is delicious)

1 whole egg beaten, sugar to taste. Add to this 1/2 teas. corn starch. 1 cup milk set to boil then stir in the other ingrediantes After this is cooked, beat again -

Lemon Filling for Pie

Three (3) whole eggs (save 1 white for top) beat real light. 1 1/2 tablespoon corn starch, juice of 1 lemon, 1/2 cup sugar. Mix all well. Put 1 1/2 cup water to boil, when boiling stir this in. (This is made after the crust is all ready) Beat the white - with a little sugar and put on top bake a second

Custard Filling 3 whole eggs (save 1 white) beat very light) 1/4 cup sugar (about 2 tables.), 1/2 cup milk, flavor, 1 tables. flour. Beat all of this well to-geather.

Cherry Filling

1 1/2 cup (seeded) cherries, 1 egg, 1 cup sugar, 1/2 tables. flour beaten with the egg. 1/2 cup milk also beaten. {Put?] cherries in pie and [pour] this over - no top leave a few seeds in - it flavors it.

Fruit Cake

1 1/2 cup brown sugar (or granulated) 1 cup molasses, 5 whole eggs 2 lbs raisens (whole) seeded 1 lb. currents. 1 lb blanch almonds (chopped) 1 lb citron 1 lb. figs. 3 tbps flour 1 cup sweet milk, 2 teas baking powder, 1 teas. cloves 1 teas. cinamon, 1 wine glass brandy or whiskey. Bake in two tins. Try with a straw so if not sticks to straw is done

Doughnuts -

Two eggs (beat) 1 cup sugar, 1/2 cup milk, flavor. Mix this all well and put enough flour in to stiffen (add to the flour 1 teas. baking powder.) Cut out and fry in hot grease ([butter or] lard) cut with small tins and enough grease to let them swim

Mayonaisse.

Two whole eggs - beaten light 1 teaspoon mustard, 2 teas. sugar 1/4 teas. salt, pinch cayenne pepper 1/2 cup vinegar. Butter size of an egg - let butter melt stir in with the rest and let come to a boil. Take off then and beat about five minutes.

Meat Pie.

Make a piecrust, take meat put on to boil, in small pieces, till real tender. Salt and pepper, a little onion, piece of carrot, piece of parsnip, chop vegetables real fine and put in meat. [About] A little flour stirred in a little water and poured in (Most meats take about 1/2 hrs. to cook. Then bake in pie crust about 15 min.
