Sweet & Sour beans Get a [breast?] of mutton suet, put on early with little pepper & onion - and put in beans in time to give them 2 or 3 hrs. cooking - till tender - same as a plain stew - (Do not cut beans) About 1/2 hr. before dinner put in tables. dark molasses, pour in little vinegar and sugar about 5 or 6 cloves. Season to taste. Take a piece of butter & a little flour in frying pan and brown it, then pour some gravy from beans on this till it thickens then pour back in beans.

Red beet soup

Peel and cut the beets in small pieces - let them boil down - season with salt, pepper sugar and vinegar. Stir in flour and yolk of egg to thicken.

Sweet and sour fish.

Cut fish into pieces. Put in cold water with seasoning of slices of lemon, carrots, parsnips, celery & parsley, few cloves, pepper and salt. When this boils add vinegar, sugar, tables. mollasses, few raisens & season to taste. When done take out fish lay on platter - garnish

same with lemon, carrot & raisens. Strain gravy. Soak 5 or 6 ginger snaps in a little gravy and add this to gravy in pan, let boil a few minutes to thicken - pour some over fish - the rest in gravy bowl to cool. This is cooked in the morning when eaten for supper

Beef Loaf.

4 lbs hamburger steak, 1 teacup butter, 4 eggs, 12 soda crackers (rolled fine) 1 pint sweet milk, pepper and salt to taste. Bake one hour.

Veal loaf Jelly.

Cook shank of veal until meat will loosen from bone. before done add piece of onion, salt, pepper, a few allspice & cloves. When done remove meat from bone and chop to med. size pieces, remove all bone from sauce, turn veal in sauce. Line a mold with slices of hard boiled egg or lemon. Turn meat into mold, let stand 24 hours

Caper Sauce. (for mutton)

Put to gether 1 tables. butter & one of flour. When smooth add half pint of water in which mutton has been boiled - stir constantly until boiling: add one tables. capers, 1/2 teas. salt & dash of pepper-

Scalloped Turnips.

Boil turnips. Cut in cubes Make a cream sauce by rubbing to-gether a tables. butter & one of flour - Add 1/2 pt. milk and stir to boiling - put a layer of turnips then layer of sauce and so on, having the last layer sauce - sprinkle over a few bread crumbs and bake in a moderate oven for 10 minutes.

Zemph Gurken or Mustard Pickles.

Peel [cut?] and scrape out seeds of large yellow cucumbers. Put salt over them and leave over night. Pour off water
