Apple Sauce Cake.

1 cup Sugar 1/2 " Shortening 1 Egg, well beaten light 1 3/4 cup Flour (or 2 cups) 1 level Teaspoon Soda 1/2 Teaspoon Cinnamon 1/2 " salt

Last1 cup warm Apple Sauce 1/2 cup raisins (if wanted)

Bake in moderate oven

Strawberry Jam

To each pound of fine and not too ripe berries, add three-quarters pound of sugar. Put into preserving kettle and stir carefully so as not to break up the berries. Simmer for one-half hour and put into jars and sea.l

Sour Cream Cookies

1/2 cup fat 2 cups sugar 2 eggs 2-3 cup sour cream 1 teaspoon vanilla 1 1/4 teaspoon salt 3 1/2 cups flour 1 teaspoon soda

Cream fat and sugar. Add rest of ingredients. Chill. Drop portions of the dough onto greased baking sheets, bake 12 minutes in moderate oven.

Pork Chop Provincial (Serving 6)

6 chops, cut 1 inch thick 1/2 cup flour 1 teaspoon salt 1/4 teaspoon paprika 6 slices onions 2 tablespoons chopped green peppers 2 teaspoons celery 2 cups tomatoes 1 1/2 cups boiled rice

Sprinkle chops with fat, fit into baking pan. Sprinkle with salt and paprika. Top with rest of ingredients. Cover, bake for 1 1/4 hours.

If this is baked in a casserole, it is best to serve it in the dish in which baked.

1/2 c. sugar, browned, add butter 1 tbs. 2 egg yolks, well beaten 1 c milk added to yolks. Pour over sugar. When melted add 1 1/2 tbsp cornstarch 1 tb vanilla

4 qts ripe tomatoes 1 pt onion chop. 1/2 teacup salt 1 1/2 c. sugar 1 1/2 tb. cinnamon 1 1/2 cloves, nutmeg + ginger. Scant teaspoon red or cayene pepper. 1 1/2 pts vinegar. boil 3 hrs.

Tomatoe Catsup (Mothers)

1/2 bu. tomatoes 1 qt vinegar, 1/2 lb. salt 1/4 lb. black pepper. 1/4 lb. allspice. 1 oz. cloves, 6 onions 2 lb. brown sugar 1 handful peach leaves. Boil 3 hrs. stirring constantly.

11 egg whites 1 1/2 c. sugar 1 c. flour 1 tb. vanilla 1 tb. cream tartar
