Mock Angel Food Cake

Whites of 2 eggs; Boil 1 cup sweet milk; into this put 1 cup ful of flour, 1 cup sugar, 3 level teaspoons Baking powder and pinch of salt (sift all this together 4 times) then mix with hot milk; last fold in whites of eggs well beaten. Flavor with teaspoon lemon flavoring. Bake in moderate oven.

Do not grease, but flour pan or pans.

Spice Cake (Mrs. Crawford)

1 1/2 cups of sugar 1/2 " butter or lard 3 eggs; well beaten 1 cup coffee; 1/2 cup milk 2 level teaspoon baking powder, little salt, sifted in 3 cups full of flour. Add last 2 cups raisins; 1/2 teaspoons each of cinnamon and cloves. The batter should be rather stiff. Baked in a moderate oven.

Keeps moist quite a while baked in a mould or two flat pans.

Sweet Pickled Cucumbers

Wash and put cucumbers in salt brine 2 or 3 hours. Let come to a boil as much vinegar and sugar, use cider vinegar; + put in mixed spices (a few) Fill Jars + put vinegar over (qt jars a best size) seal tight. [Can?] jars full of liquid.

Crab Apple Pickle

Prepare fruit as for preserving. To 7 pounds of fruit add 3 lbs sugar, 1 1/2 pint vinegar 1 1/2 pint water, 1 ounce cinnamon, cloves and mace. Put all together in kettle cook apples until you can pierce with straw remove fruit and cook syrup until thick.

Oat Meal Cookies

3/4 cups shortening 1 1/3 cup sugar 2/3 " water 2 eggs 2 cups oatmeal 1 1/2 cups flour - salt 1 cup nuts (fine) 1 cup raisins - (cut) 1/2 tea spoon cinnamon and nutmeg Add last 1 level teaspoon soda in 3 tablespoons hot water

Make thick and drop in greased pan to bake
