Queen of Puddings

To 1 qt of milk add 1 pt of bread cut in very small peices, let it stand 1/2 of an hour then add 1 cup of sugar the yolks of 4 eggs the grated rind of a lemon, a peice of butter the size of an egg warmed and stirred in. Butter a dish, pour in, bake 3/4 of an hour When done spread over the top some preserve, then the beaten whites of the eggs to which has been added 1/3 cup of sugar place in the oven for a few minutes. Add to the pudding a pinch of salt, when it is done the pudding shrinks from the sides
