Bishop Williams Corn Cakes
1 level cup cornmeal
1 level cup flour
1 1/2 level cup sour milk and cream
1 t soda (little rounding)
1 t salt (level)
2 eggs
Sift together dry ingredients
Beat eggs and add milk
Pour in the meal and mix to a thin
batter. Dissolve soda in a little warm
water and add. Beat well.
Pour into dripping pan or gem irons and
bake 20 or 30 min in quick oven.
Roux for Croquettes
Into a granite saucepan put 1 T
butter, when it boils add 1 T flour
large. Cook well add slowly 1/2 pint milk
or stock hot, cook and stir until smooth
and thick. Add 1/2 t salt and a little
pepper. Remove from fire and add 1 pint
firmly chopped meat. Season with onion juice.
