Ginger Loaf with Lemon Sauce
4 cups flour
1 teaspoon soda
1 teaspoon cream of tartar
1 ½ teaspoons ground ginger
½ cup candied ginger, cut fine
¾ cup sugar
1 cup shortening
2 eggs
1 cup corn syrup or light molasses
½ cup milk
sauce
2 teaspoons cornstarch, 1 cup of
sugar, 2 cups boiling water, juice
+ grated rind 1 lemon, 2 tbsp. butter.
= Sift flour with soda, cream of
tarter + ground ginger. Cream sugar +
shortening + blend in the candied ginger
Beat eggs + add syrup + milk. Add
to the creamed sugar + shortening
mixture alternately with the sifted
dry ingredients + mix well. Pour
into a large greased pan + bake
in a moderate oven 350° F. for
about 1 ½ hrs. Serve with Lemon sauce
made by combining lemon juice, grated
rind + boiling water with the sugar +
cornstarch. Add butter just before serving
