Ginger Tea Cakes
1 recipe pie pastry for 2 crust pie
½ cup marmalade
¼ cup sugar
4 tbsp butter
1 egg, beaten
½ cup flour (half cup)
¼ tsp ground ginger
2 tbsp chopped candied ginger
Confectioner's sugar
Line about 16 shallow patty pans
with pastry or cut rounds of
pastry + raise a fluted edge
around them. Put a little
marmalade in the bottom
of each. Blend together the
sugar + butter + mix with
the beaten egg, flour, ground
ginger + the the preserved or
candied ginger. Mix until
light + put a heaping
teaspoon on each little pastry
shell. Bake in a hot oven
450° F. from 15 to 20 minutes. cool
and sprinkle with confectioners
sugar. These are delicious
for afternoon tea but are
also appropriate for dessert.
