Blueberry Buckle
Thoroly [thoroughly] cream ½ cup shortening &
½ cup sugar, add 1 beaten egg &
mix well. Sift 2 cups flour, ¼ tsp.
salt & 2 ½ tsp. baking powder, add
to the creamed mixture alternately
with ½ cup milk. Pour into greased
8 inch layer cake pan & sprinkle
2 cups fresh berries (blueberries)
over batter. Mix ½ cup sugar, ½ cup
flour, ½ tsp. cinnamon & ¼ cup butter
until crumbly; sprinkle over blue=
berries. Bake in moderate oven 350°
1 hr. and 15 mins. Cut in wedges &
serve as a bread or dessert.

Raspberry Bran Muffins.
Sift 1 cup flour, ½ tsp. salt. 3 tsp. B.P.
& ¼ cup sugar, add 1 cup bran &
1 cup fresh raspberries. Mix lightly,
combine 1 beaten egg, ¾ cup milk &
¼ cup salad oil; add to dry ingredients
& stir only until blended. Fill greased
muffin pan ⅔ full & bake in hot
oven 20 to 25 minutes. Makes 1 dozen.
Serve for breakfast with chilled
melon, Bacon, & Scrambled Eggs.
