Spring Shortcake (Like a torte)


¼ cup shortening 2 tsp. baking powder
½ cups sugar ½ cup milk
2 egg yolks 2 stiff beaten egg whites
½ tsp. almond extract ½ cup sugar
1¾ cups cake flour 1 pt. strawberries
¼ tsp. salt
Cream shortening & sugar, add
egg yolks & almond extract. Beat
well. Add sifted dry ingredients
alternately with milk. Pour into
two 8 inch layer cake pans. Spread
layers with meringue made of
egg whites & sugar. Bake in a
moderate oven 350° 40 minutes.
Sweeten sliced strawberries,
spread lower layer & top. Serve
warm.

Rhubarb-Strawberry Roll
2 cups dried rhubarb, 1 cup
sliced strawberries, 1 cup water
¾ cup sugar, 2 cups flour, ½
tsp. salt, 4 tsp. baking powder
⅓ cup shortening, ⅔ cup milk
1 beaten egg.
Slightly sweeten rhubarb & straw-
berries. Make sirup of water &
sugar in 8 inch square pan.
Cook 5 min; Make biscuit dough
of remaining ingredients. Roll &
1/3 inch thickness (1/3 in); spread
with fruits; roll out in 1 inch
slices, place in hot sirup. Bake
in hot oven 450 for 25 minutes.
Serve hot with cream.
