McCalls-October 1940

Layered Peach Mousse
Whip 2 cups heavy cream, add 1/2
cup powdered sugar, 1 tsp. vanilla
Chill until slightly thick in tray
of automatic refrigerator with
control set for freezing. Drain one
No. 2 1/2 can sliced peaches, puree
1 3/4 cups, add 1/2 tsp. almond extract
1 tbsp sugar. Chill. Place cream
mixture alternately with peach
mixture in matal pan. 9 x 4 1/2 x 2 3/4
Freeze firm. Unmold. Garnish with
peach slices & almonds.

Cranberry Citrus Cup.
Peel 1 grapefruit & 2 oranges.
Seperate into segments, chill. Cube
1/2 cups cranberry sauce, chill.
Combine grapefruit & orange segments
& cranberry sauce. Serve in
sherbet glasses for first course.
Serves 4.
