McCalls-October 1940

Barbecue Spareribs
2 lbs. spareribs, 1 medium onion,
2 tbsp. fat, 4 tbsp lemon juice, 2
tbsp vinegar, 1 tbsp Worchestershire
sauce, 2 tbsp brown sugar, 1/2 cup
water, 1 cup chili sauce, salt &
pepper.
Have spareribs cut at the
market into pieces for serving.
Place in baking pan. Bake in
moderate oven 350º for 30 minutes.
Chop onions, brown in fat, add
remaining ingredients. Cook
slowly for 20 minutes. Pour over
spareribs, continue baking 1 hr.
Serves 4.

Mock Whole Ham.
Beat 2 eggs, add 1/2 cup milk
3 cups soft bread crumbs,
2 1/2 lbs. ground smoked ham
shank, 1/2 lb. ground beef, 1 cup
chili sauce, mix well. Form
into shape of ham on rack
in pan. Garnish with candied
orange peel. Bake in moderate
oven 350º F. for 2 hrs. Garnish
with pineapple tidbits & cloves.
Bake 1/2 hour. Serves 8.
