Mayonnaise

1 egg yolk
1 C oil
4 TB acid, (vinegar or lemon juice)
1 t each salt, powdered sugar, mustard, f.g. [few grains] pepper and paprika
1 egg white

Beat yolk till thick,
add oil drop for drop. When
it thickens, thin out with a
few drops of acid. Repeat until
all oil and acid are used. Add
seasonings. Lastly fold in
stiffly beaten white.

Sponge Cake

4 eggs

Beat the whites of eggs
with salt until dry,
then add ½ of sugar.
