Boiled Beef with Horseradish Sauce
3 qts boiling water | 3 ¼ t. salt |
1 bay leaf | 4 lbs rare brisket of beef |
6 whole cloves | |
2 cloves garlic, peeled | 1 Tb. butter |
1 small onion, peeled & sliced | 1 Tb. flour |
½ c. drained, bottled horse radish | |
2 stalks celery | |
2 Tb. vinegar | dash pepper |
2 Tb. gran. sugar | 1 c. milk |
Combine 1st 8 ingredients plus
2 t. salt in large kettle, cover &
boil 30 min. Add beef, cover & simmer
4 hrs or until tender, adding boiling
water if necessary. With butter, add
flour & remaining salt, horse radish
& pepper. Add milk & cook until
thick. (Use meat broth as soup
base)
Braised Oxtails
1 oxtails, cut in 2" lengths | 3 Tb. fat |
2 c. hot water | |
1 c. minced onion | 1 Tb. vinegar. |
