Fruit Cake
1 C butter | 3 lbs raisins |
2 C sugar | 2 lbs currants |
3 C flour | 1 lb citron |
1 C water | ½ t nutmeg |
½ C molasses | ½ t ground cloves |
4 eggs | 1 t cinnamon |
scant ½ t soda | 1 t salt |
Clam Chowder
2 C any vegetable in season (carrots, turnips, cabbage, parsnips, onion, peas, beans, celery) 4 C water 2 C clam broth 1 C tomatoes (strained) 1 doz clams cut into pieces 3 slices bacon or salt pork Seasonings
Prepare vegetable, cut into small pieces

Brown bacon cut into dice. Add to boiling water. Add clam broth, vegetables and tomatoes. Cook until vegetables are tender. Season, add chopped clams, simmer 1 minute.
Dressing for Fowl
2 C bread crumbs 1 egg, beaten with fork 1 apple, chopped fine 1 onion, chopped fine 1 T salt ¼ t pepper 1 t. thyme ½ t sage 5 TB fat. Crisco, butter. melted bacon fat is delicious
Mix all above together well.

Salmon Cutlets
2 C hot boiled rice 1 lb can salmon 1 TB chopped parsley 2 t salt 1 TB lemon juice 1 beaten egg
Remove bones and skin from salmon and seperate into flakes. Mix salmon, rice, parsley, salt, lemon juice and egg together, and spread out to cool. Shape into cutlets. Dip in beaten egg and then on fine bread crumbs and saute in hot fat until brown or brown in hot oven. Serve with egg or parsley sauce.

Frozen Cranberries
Boil 1 qt cranberries, ¾ C raisins, and 2 C water 10 mins. Strain thru a puree sieve. Cook 2 C sugar with 2 C water 20 min and add to the fruit mixture. Cool and freeze to a mush. The whites of the 2 eggs slightly beaten may be added when the mixture is half frozen.
Rice Souffle
2 TB butter 3 TB flour 1 C grated cheese 1 C cooked rice 1 C milk 1 t salt f. g. pepper 2 eggs (separated)
Make white sauce cooked till it thickens. Add chese. Put in rice and beaten egg yolks. Lastly fold in stiffly beaten whites. Pour in baking dish. Bake in mod. oven 30 min.

Pumpkin Pie
2 C milk 2 C strained cooked pumpkin ¾ C sugar 2 well beaten egg yolks 2 well beaten egg whites 3 TB molasses 1 TB melted butter 1 t ginger 1 t cinnamon ½ t salt
Mix ingredients. Lastly fold in stiffly beaten whites. Bake in one crust pie about 45 min.
Vegetable Soup
3 C chopped vegetables, (carrots, turnips, celery knob, cabbage, onions, beans) 6 C boiling water 1 C strained tomatoes
