Scones

2 C. sifted cake flour ¼ C. shortening
3 t. baking powder 5 Tb. milk
½ t. salt 2 eggs
2 Tb. gran. sugar
Sift together the flour, baking powder salt and 2 Tb.sugar. Cut shortening into this until mixture looks like coarse corn meal. Add milk. Separate 1 egg, reserve 1 Tb. of the white. Beat rest of this egg into othe egg. Add to flour mixture. Roll to ½" on a lightly floured board. Cut into 3" squares, then cut each square into 2 triangles Arrange on a greased baking sheet; brush top of each scone with some of the egg white, slightly beaten, and sprinkle with remaining sugar. bake in 450° oven for 10 min. Next day the scones may be split, brush the cut sides with melted butter and toast until golden brown. Makes about 20 split scones.

May be split, spread with butter, then toast without turning, in broiler oven.

Filet of Sole Thermidor

1½ lbs filet 2 Tb. flour
1 C. milk 2 Tb. sherry
¾ t. salt ¼ C. grated processed American cheese
pepper 2 Tb. butter
Put fish in shallow greased baking pan with milk, salt and pepper. Bake in mod. oven, 350° for 30 min. Melt butter and stir in flour. When fish is done, pour off milk and add to butter, cook sauce until thick, add sherry and cheese and stir until cheese melts. Pour over fish and place under broiler to brown lightly

Chocolate Crumb Pudding

¼ C. butter 2 eggs, beaten
¾ C brown sugar, firmly packed 2 C. soft bread cubes or crumbs
2 C. scalded milk 1 t. vanilla
2 C. cold milk ½ 7 oz pkge semisweet choc.
Melt butter in skillet, add sugar, heat, stiirring until melted Add to scalded mik, stir till dissolved. Add cold milk, then slowly add to eggs. Add crumbs, vanilla and choc. cut thru [sc.ings] Pour into 1½ qt casserole, set in pan of warm water and bake in 350° oven 1½ hrs or until knife comes out clean. Serve warm, with or without cream.

Beat eggs and beat in sugar. Add sifted dry ingredients. Mix [milk?] butter and flavoring and add to first Bake in 8" square pan 30 min in 350° oven Frosting 5 Tb. light brown sugar 3 Tb. melted butter 2 Tb. cream ½ C. coconut Mix while cake is baking and spread over it quickly when it comes from the oven. Put under broiler and brown lightly.

Cream Cheese Cookies

1½ C. flour 1 3oz pkg cream cheese
½ t. salt 3 Tb. corn syrup
½ C. shortening 3-4 Tbls jam
Sift flour, mesure, add salt and sift again. Cream shortening, add cream cheese and blend well. Combine

sirup [corn syrup] with creamed mixture, add flour, mix thoroly. Chill well, roll out ⅛" thick on lightly floured board. Cut into shapes, top with a bit of jam. Place on ungreased baking [sheet?] bake in mod. oven 350° 10-12 min. 3 doz. 2" cookies

Oatmeal Cookies (Cross)

3 C. oats 1 C. shortening
2 C. flour dash salt
1 C. sugar nutmeg
½ C. hot water with 1 t. [baking] soda Mix well, roll, cut, bake 15 min

Peanut Butter Cookies

½ C. shortening part butter 1 egg
½ C. peanut butter 1¼ C. sifted flour
½ C. sugar
½ C. brown sugar ¾ t. [baking.] soda
½ t. baking powder ¼ t. salt
Cream shortening and peanut butter
