Fried Scallops and Bacon

Wash scallops and parboil 10 min. Drain. Dip in egg and cracker crumbs. Fry bacon. Remove onto hot plates. Fry scallops in bacon fat and until brown.

Escalloped Potatoes

6 medium sized potatoes milk 1 t salt ¼ tpepper 2 TB butter 2 TB flour 1 slice finely chopped onion Grated cheese or buttered breadcrumbs

Grease a baking dish. Fill with thinly sliced potatoes. Sprinkle between potatoes flour and butter. Add just enough milk until it appears at top of potatoes. Cover with buttered crumbs or grated cheese. Bake until potatoes are tender. About 30 min.

Russian Dressing

Put juice ½ lemon in an ice cold soup plate. Add 2 TB chili sauce, 1 TB Brands A1 sauce. Stir together, add ½ C mayonnaise, chopped pickles, olive or peppers may be added. Serve over

Pineapple Pie

1 can grated pineapple 1 C sugar 2½ TB flour f.g. [few grains] salt 1 egg, separated ½ TB butter

Prepare pie crust. Brush over with white of egg to prevent sogginess. Strain pineapple. Add sugar, flour, salt and beaten egg. Pour into pie dish. Add small pieces of butter. Cover with strips of pastry. Bake in oven about 40 min. reducing heat during second half of baking.

Quick Beef a la mode or Brown Beef

2 lbs beef, chuck or cross rib, cut into cubes 2 med sized onions ¼ C butter or beef drippings 2 t salt ⅛ t pepper 4 cloves 2 TB flour 1 bay leaf 1 pt. strained tomatoes

Slice onions and cook until yellowed in fat. Add the cloves, bay leaf and beef, cut into cubes, and fry until brown, then add tomatoes and enough boiling water to well cover the meat. If desired all boiling water may be added instead of tomatoes. Add seasonings. Simmer 2 or 3 hrs, or until meat is tender. When ready to serve, thicken gravy with 3 TB flour. 1 cup of carrots cubed, may be added last hour of cooking.

pieces. Cook in small amount of water until tender. Add 1 can strained peas. Make a paste of 2 TB butter and 2 TB flour and thicken mixture with this. Add seasoning.

Asparagus Salad

Arrange asparagus tips on crisp lettuce leaves. Garnish with a band (¼" wide) of pimento and salad dressing - either mayonnaise, cooked salad dressing or French dressing.

Butterscotch Pie

1 C butter 2 C brown sugar 4 egg yolks 4 TB flour ¼ C gran. sugar 1 C milk f.g. salt

Melt sugar. Add butter and flour. Add milk. Cook three min. Remove from fire. Add beaten egg yolks and salt. Cook. Fill in baked pie shells
