Never Fail Cream Puffs (mother's recipe)
1 C. boiling water poured over
one half C. butter. When you have
done this, place it on the stove
+ bring to a boil + add one cup
of sifted flour. Let boil 5 minutes,
beating all the time.
When cool add 3 eggs, (one at a time) not beaten.
Beat for 10 min + then add soda
size of a pea. This makes 12 puffs.
Bake 30 min

Filling: 1 C. milk (warm)
1 egg
½ C. sugar
2 T cornstarch
Beat until thick. Flavor to taste.
When puffs + filling are both cool
open a little on the side + fill,
with a tube.
