& is chiefly used for making oil. Thy it are is also
pickled green & ripe. When wanted for oil, the
berries are spread on the housetop to dry.
After that thy are ground in a very simple man-
ner then come into a press which is worked by a
lever, & so the oil is pressed out. It is very
sweet in its unclarified state & very much eaten
& considered a great luxury & not all can afford
to use it. It is brought down from the moun-
tains in goatskins upon Camels & donkeys
to Jaffa, from where whence it is exported chiefly
to France. It is there clarified & in this
state it reaches this Country. The wood
of the olive tree is also very beautiful, &
it is generally agreed, that it surpasses
greatly mahogone & rosewood. When the
