been long ago defunct; but we still have its representative molasses -
twice a week in our tea.
Third, butter: there it is - in a vegetable dish -
--my own invention - melted from salt beef,
and washed with many waters.
The unskilled might [would it], call it "tallow."
Fourth, a real delicacy not to be surpassed
in court or camp - hot rolls of fine Virginia
flour - thanks and fabricked by a Virginia
artist... I made em myself.
What else? Nothing else. The breakfast
resolved itself into Bean Coffee, tallow &
hot bread, and a cordial meal it is. The men who can't be
grateful for them don't deserve a better.

I can hurry over all this very easily,
for although I love to dawdle in Charles Lands
style with pensive enthusiasm upon the flesh
pots - I confess that there is nothing here
to fasten me. Dinner is breakfast
without the bean coffee but with the
beans converted into soup - [mediocritec
fare - Supper boasts of stewed apples,
[but as these are no beans the alternative of the beans
I call it "pressime". So much for our
grubb.]

Work commences at 9. Petersen
is off with his gun and Kane with the
two remaining dearly beloved Rogers arrange their
carte : Slop tub emptied, ice cut, frozen
provisions chopped out; [and] wood to be
quarried from the bowels of th brig [our little
ship] - Dinner cooking - a disgusting part
in the days routine - [falls upon Captain
[me or other of us.] And so we work
on until two. During these five hours,
I make the rounds of the sick and
deal out their daily allowance of
raw meat. Those who can sit in bed
and work are [placed at] picking
