100. To clarify Suet [?]
The [Mutton{struck through}] Suet must
be from the Caul which is the
finest. & chopt very small, then
rolld with a rolling Pin. & beat to a
Paste in a marble Mortar with a
heavy Pestle, like Dough which
clears it from the Blood & [?]
Put it then into Spring
Water, & let it lay 1 or 2 days -
Squeeze the Water well from
it. & repeat the washing in 3 or 4 difft
waters at the last squeeze out the
water perfectly by making it into
several Balls - which [put{struck through}] break &
put into an earthen Pot & melt gently
in hot water, till the Steam goes
off from the Suet. at that Instant
take it from the Fire to prevent its

Caul is a fatty netting that surrounds the organs of some animals.

Transcription Conventions

Line Breaks: Hit return once after each line ends. Two returns indicate a new paragraph, which is usually indentation following the preceding sentence in the original. The times at the end of each entry should get their own paragraph, since the software does not support indentation in the transcriptions.
Illegible text: Indicate illegible readings in single square brackets: [Dr?]
A single newline indicates a line-break in the original document, and will not appear as a break in the text in some views or exports. Two newlines indicate a paragraph, and will appear as a paragraph break in all views.
