Ginger Beer
To 1 oz: of bruised ginger add 1 lb: of loaf
Sugar, the thin rind of a Lemon & a Gallon
of water, to be poured boiling hot over the
other ingredients; cover down closely to
keep in the steam: When quite cold;
add the juice of one Lemon, & a table-
-spoonfull of Yeast: let stand 24 hours,
strain, bottle, and closely cork down.
The Beer will be ready for use in 3 days.
N.B. Be careful to get the best Ginger, and
slice or bruise it - that which is ground
will not do. Put in stone bottles.
