40 To Make Orange Shrubb
To a Gallon of Brandy put a Pint of Orange Juice the Peal[Peel] of eight oranges and four Lemons let them stand 3 or 4 Days stirring them two or three times a Day then take out all the Peel and just to Liquor 1 Quart of Mountain wine 1 1/4 lb Tbh[?] refined Sugar 3 Pints boiling Spring water half a Pint of Milk little more than new milk warm next Day run[?] it thro a Jolly Bag it must be run thro 2 or 3 times before it will be clear NB. The Water must be put to the Sugar and when cool put it to the other Ingredients
To Make Shrub[?] for Punch Take 32 good Oranges 1 1/4 lb Dble refined Sugar 1 Gallon Rum or Brandy squeeze the oranges upon your Sugar thro a Sieve and put it up with the Rum or Brandy in a refsel[?] Shake it 7 or 8 Days twice a Day let it stand 3 weeks in the bejsel[?] then Bottle it off for use.
