fire to rise, as it rises you will see the flour
[crak] at night, take 6 eggs & 5 spoonfulls of loaf
sugar & beat them well together, then take a
bit of new milk & melt 3 or 4 ozs of butter in it
& mix it up warm, working it till it is done
sticking to your hands, then warm the tray
in to which you put it, & cover it up warm in
till morning. In the morning your oven -
being ready make it into cakes about as large as
a biscuit, lay one upon the other & let them
remain 1/4 of an hour, & they will rise as large again
as they were before, then put them into an oven
not too hot & when they are baked let them stand
to cool. Then split them [this?] the middle & put
them into an oven to dry, this quantity will
make 3 or 4 biscuts, it would be better to set
the leaven & flour to rise in the morning to
make it up at noon & bake it at night.
for if it stands as long as the receipt says in the sum
mer it will probably sour.
